Oatmeal pancake recipe

A no-oven, tasty and genuine recipe from the blogger "Ricettario Timo e Lavanda" : these Pancakes with oat flour are in fact without added sugar, they are sweetened only with a banana! They are also prepared without dairy products and with Ruggeri oat flour .

This flour has a high content of fiber and protein and is excellent for enriching recipes of all kinds, both sweet and savory. Also perfect for preparing another recipe for Anglo-Saxon breakfast : porridge, an oat soup that can be personalized with dried fruit, fresh fruit and honey.

No Oven Recipe: Oat Flour Pancakes, Sugar Free

Ingredients

  • 150 g of Ruggeri Oat Flour
  • 160 g almond milk
  • 1 banana
  • 1 egg
  • 2 teaspoons baking powder
  • 2 tablespoons coconut oil or light oil
  • dark chocolate chips
  • Garnish: maple syrup, cocoa cream, honey, jam...

Procedure for preparing pancakes with oat flour

In the blender jug ​​add the egg and the banana, previously cut into small pieces. Then, add the milk and oil and blend until you get a smooth mixture. Add the Ruggeri oat flour and the yeast.
Mix again until all the ingredients are well combined. In the meantime, heat a griddle or a non-stick pan and pour a ladle of mixture, to obtain a pancake. Add a few dark chocolate chips directly into the pancake while it is cooking.
After 2 minutes of cooking, turn over and continue cooking for another 2 minutes, on low heat. Continue with the rest of the dough in the same way, until all the mixture is used up.
Serve 2-3 pancakes per portion. The topping is your choice: maple syrup, cocoa cream, honey, jam, fresh fruit, etc.
