Ingredients:
- 50 g of Ruggeri spelt flour
- 5 g of bitter cocoa
- 150 g of egg white
- 100 g of pitted cherries
- 150g of Greek yogurt
- cocoa for dusting
Procedure:
Heat a 14cm saucepan.
Beat the egg white well until it becomes white and frothy, do not use snow, add the flour and cocoa, mix until the mixture is smooth.
Pour the batter into the pan and cook on low heat with the lid on for about 8 minutes, until the top has set. Turn the pancake over and let it cook for a few more minutes, when it is cooked, let it cool and then cut it into two parts.
Fill the inside with 3/4 of the yogurt and arrange a layer of halved cherries. Close and glaze with the remaining yogurt, sprinkle with cocoa and decorate with a few more cherries.
