Ingredients:
vanilla waffles:
- 50 g of Ruggeri spelt flour
- 90 g of egg white
- 50g of mashed banana
- 30 ml of almond milk or any other vegetable milk

chocolate waffles:
- 50 g of Ruggeri spelt flour
- 90 g of egg white
- 50g of mashed banana
- 30 ml of almond milk or any other vegetable milk
- 5 g of bitter cocoa
- the tip of a teaspoon of yeast
Topping:
- yogurt
- blueberries, strawberries, raspberries
Procedure:
Heat the waffle iron and grease it with a little coconut oil if necessary.
Meanwhile, in a bowl, mash the banana. Once you have a smooth puree, mix the flour, vanilla, milk with the egg white and yeast.
When the griddle is hot pour a third of the dough and close. Cook for 4 minutes then open and set aside. Continue with the remaining dough.
While the first waffles are cooking, prepare the chocolate ones. In a bowl, mash the banana. Once you have obtained a smooth puree, mix the flour, the bitter cocoa, the milk with the egg white and the yeast.
Now let's cook the chocolate ones, always dividing the dough into three parts. Cook for 4 minutes then open and set aside. Continue with the remaining dough.
Cut each waffle in half and match it with the other half of the other color, so that you get two-tone waffles. Stack them and decorate with yogurt and berries.
