Plumecake with mandarins | Stone-ground soft wheat flour

Ingredients

  • 200 g of Ruggeri Soft Wheat Flour
  • 2 eggs
  • 120 g of sugar
  • 70 ml of seed oil
  • 70 ml of mandarin juice
  • a sachet of baking powder
  • a few drops of vanilla essence

Procedure

To prepare this mandarin plum cake, start by beating the eggs and sugar in a bowl until the mixture is light and frothy. Gradually add the oil and mandarin juice, then the flour. Mix the mixture well with an electric mixer. Finally add the yeast and vanilla essence. Butter and flour a plum cake mold or line it with baking paper. Pour in the mixture, bake at 180° for about 35-40 minutes. Do the toothpick test: every oven is different. And your mandarin plum cake is ready!
