Rustic squares with red fruits | Ruggeri Spelt Flour

  • 90 g of Ruggeri spelt flour
  • 90 g of wholemeal flour
  • 60 g of brown sugar
  • 60 g of butter
  • a yolk
  • juice and zest of half a lemon
  • 30 g of dried strawberries
  • 30 g of dried cherries
To make the rustic squares with red fruits it is really quick.. in a glass, soak the red fruits in warm water.. in a bowl, put the butter and sugar, working them into a cream.. add the egg yolk and gradually incorporate the flours, the lemon zest and juice.. now drain and chop the red fruits with a mixer.. add them to the biscuit dough.. mix everything well in a homogeneous way.. if possible, let it rest for about twenty minutes in the fridge.. take the dough, roll it out to a height of half a centimeter and cut the squares.. continue until you finish the pastry.. even if they do not have yeast, space them a couple of centimeters apart.. bake at 180 ° for about 15 minutes.. your rustic squares with red fruits are ready!!
