Buckwheat cake with strawberries and mascarpone

buckwheat-cake-5630 Ingredients:
  • 100 g of butter
  • 3 eggs
  • 100 g of sugar
  • 120 g of Ruggeri buckwheat flour
  • 120 g chopped walnuts
  • 2 teaspoons baking powder
For the filling:
  • 200g of mascarpone
  • 100g of strawberry jam
  • vanilla icing sugar
To prepare the Buckwheat Cake with Strawberries and Mascarpone, start like this... in a bowl, cream the softened butter with the sugar... incorporate the egg yolks and obtain a smooth mixture... now add the flour and the chopped walnuts... beat the egg whites until stiff and gently add them to the mixture... transfer the mixture into the pan, buttered and floured, bake at 180° and cook for about 40 minutes... remove the cake, let it cool... cut it in two horizontally, sprinkle the mascarpone and the strawberry jam on top... sprinkle with vanilla icing sugar... your Buckwheat Cake with Strawberries and Mascarpone is Ready!!
