Recipe from " Cooking with Paola "
Homemade muffins are the easiest and quickest snack to prepare, even in the company of your children. "Cooking with Paola" offers us a new recipe: quinoa muffins, with yogurt and chocolate chips . Thanks to Ruggeri Quinoa Flour , these muffins have a more intense flavor, delicious with a nice cup of milk.Ingredients
- 130 g of Ruggeri Stone Ground Soft Wheat Flour
- 70 g of Ruggeri Quinoa Flour
- 170 g of plain yogurt
- 140 g granulated sugar
- 70 ml of seed oil
- 2 medium eggs
- 8 g vanilla baking powder
- 1 teaspoon vanilla extract
- dark chocolate chips
Procedure
Preheat the oven to 180°C static. In a bowl, place the shelled eggs with the sugar and vanilla extract. Mix well until the mixture is frothy.
Add the oil and yogurt, mixing vigorously until the sugar has completely dissolved. Add the flour and sifted baking powder, mixing gently until the mixture is creamy. Add the dark chocolate chips.
Take the rigid baking paper cups that do not require a mold and pour the mixture up to 3/4. Add more chocolate chips. Bake the muffins for about 20 minutes, until they are golden on the surface. Let them cool before serving.
