Lipase is an enzyme that naturally replicates the effect of artificial emulsifiers like E471 and E472, promoting the formation of bonds between lipids and gluten. It increases dough stability and toleranceduring leavening, improving crumb structure.

Thanks to its emulsifying action, it is ideal for those seeking a natural solution to improve the quality and yield of their baked goods, from artisanal bread and pizza to leavened products.

Dose at 1% on the weight of the flour, like a normal ingredient.

Preferably to be dosed in combination with: Xylanase, Amyloglucosidase, Amylaseand Ascorbic Acidfrom the "Technical Formulations" line.
