- The 25 kg kit includes two mixes: the Mix Madre, to be used in the first dough, and Mix Padre, to be used in the second dough. Just weigh yeast, water, sugar, eggs and butter.
- Thanks to its innovative enzymatic formulation, Volare® mix ensures extremely soft and fresh Panettone cakes.
- With Volare® you can make up to 80 artisan Panettone cakes, 750 g each.

Volare®, the professional mix for clean label Panettone
A complete mix to bake large leavened cakes without chemical emulsifiers, in an easy wat. It contains a special enzymatic formulation that increases softness and freshness of Panettone, Pandoro and Colomba Easter cake. Volare® also makes the dough more stable and easier to work. It is a mix without aromas, which allows to custom the Panettone dough with flavors, aromas and fillings as desired. Furthermore, large leavened cakes prepared with Volare® will be characterized by excellent volume and wide hole structure.

*The flour has been treated with L-Ascorbic acid, which has a technological function. No trace of it remains once the product is cooked. Therefore does not need to be declared on the label in the Italian market.
