What is Ruggeri's Organic Dried Sourdough?

It comes from the selection of the best organic sourdoughs. It does not require the addition of brewer's yeast and is ideal for short and long leavening. Our sourdough enhance the flavor and aromas of baked bread. It improves the workability of the dough too. The brewer's yeast starts the leavening process. Ruggeri Organic Spelt Sourdough is suitable for all types of bread, focaccia, pizza and large leavened cakes.

  • Dried type "0" wheat flour*
  • Dried spelt sourdough* 8,5%
  • Dried brewer's yeast 4,9%
  • Vital wheat gluten*

It may contains these allergens: milk, eggs, soy, sesame seeds and lupin.

How to use Organic Sourdough

How to use Organic Sourdough

For homemade bread, pizza and focaccia

Short Leavening: dose at 20% on the total amount of flour and add it in the recipe. Let rise for 2 hours at room temperature. For example, add 100 g of Organic Sourdough to 500 g of flour and follow the procedures of the recipe.

Long leavening: reduce the dosage up to 10% and let rise in the fridge for 6/8 hours.

How to store our Organic Sourdough

We recommend always sealing the package, using food bag clips. Our Dried Sourdough is best kept in a cool place: in the warmer months, we recommend storing the package in the fridge.
