Red Lentil Flour: a flour with a high protein content
Our Red Lentil Flour is perfect for the preparation of various homemade bread recipes. Use it also for the preparation of creamy soups (25-30 minutes minimum cooking time). This flour can be used to prepare tasty bread, pizzas and focaccias, mixing it with wheat flour. We suggest to dose it up to 25% for the preparations of special bread. Recipe for bread with Red Lentil Flour
Ingredients: 900 g Ruggeri Type 1 Wheat Flour - 100 g Ruggeri Red Lentil Flour - 100 g Ruggeri Dried Sourdough - 20 g Fine Salt - 30 ml Seed Oil - 600 ml Water
Procedure: pour the water into a bowl, add the Dried Sourdough, then all the flour and begin to knead for about 5 minutes on a work surface. Add the seed oil and finally the salt, continuing to knead until the dough is smooth and homogeneous. Place the dough back in the bowl, covered with a cloth, for about 20 minutes. Form loaves and let them rest for 45 minutes at about 27C°. Heat the oven to 220°C and bake for about 20 minutes.
It may contain milk, egg, soy, sesame seeds, lupins and cereals containing gluten.
